  • ¼ cup vegetable oil
  • 1 small onion finely chopped
  • 5 cloves garlic finely chopped
  • 2 tablespoons chili powder
  • 8 cups water
  • 2 cups split red lentils rinsed and drained
  • 2 tablespoons tomato paste
  • ¾ teaspoon salt

Method
 

  1. Directions
  2. Wash your hands with soap and warm water. In a large pot, heat oil over medium heat. Add onion and cook until tender. Stir in garlic and chili powder. Cook for 1 minute.
  3. Add water, lentils, tomato paste, and salt.
  4. Bring to a boil. Reduce heat to low and simmer until lentils are tender, about 20 minutes (or 30 minutes for brown lentils). Stir occasionally.
  5. Serve hot with your favorite whole grain bread.
