Roasted Honey Sage Squash & Apples

A holiday harvest of acorn squash and apples roasted and glazed with olive oil, honey, and fresh sage. This time of year I seek out comfort foods that I can create a healthy version. A great addition to the holiday table as the featured (local) side dish. Acorn squash is packed with vitamin C, B vitamins, potassium, magnesium, and fiber. Acorn squash does take some time to cook in the oven, so give yourself ample time.

Equipment

  • Baking Sheet
  • Cutting Board
  • mixing bowl

Ingredients
  

  • 1 each acorn squash cut into quarters
  • 2 each apples halved
  • 2 tbsp olive oil
  • 2 tbsp honey
  • 3 tbsp sage chopped
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions
 

  • Preheat oven to 375 F
  • Cut acorn squash into 4 pieces (quarters)
  • Cut apples into halves and remove seeds (keep skin)
  • Place in a baking dish or sheet pan
  • In a small bowl, mix olive oil, honey, sage, salt, and pepper
  • Brush or spoon over squash and apples
  • Bake for 45 min to 1 hr, until squash is soft and knife can pierce through easily

Notes

Use as much fresh sage as you like
