Ingredients

  • 1 ½ Teaspoons vegetable oil
  • ½ cup chopped onion
  • 1 clove garlic minced
  • 1 medium tomato chopped
  • 3 cups fresh spinach
  • ½ Teaspoon Italian seasoning
  • teaspoon black pepper
  • ¼ Teaspoon salt
  • 4 large egg whites

Method
 

  1. Directions
  2. Wash hands with warm water and soap. Wash fresh vegetables before preparing.
  3. Heat oil in skillet. Add onion, garlic and tomato and sauté until soft.
  4. While onion is cooking, steam spinach in a pan with a small amount of water. Cook until spinach is wilted, drain.
  5. Add Italian seasonings, pepper and salt to the beaten egg whites. Add egg whites to the onion mixture.
  6. Stir in the spinach.
  7. Cover with a tight fitting lid and turn heat to low.
  8. Cook for 15 minutes and check for firmness when done.
