- Add the cauliflower florets to a food processor and pulse until the texture resembles rice. Add the carrot and pulse again until finely shredded. Add the lemon juice, olive oil, garlic, salt, and pepper. Pulse briefly to combine, being careful not to overprocess.
- Transfer the mixture to a bowl and fold in the chopped herbs or greens. Taste and adjust seasoning as needed. Serve chilled or at room temperature.
