Roast Pear, Mizuna, and Parmesan Salad

Ingredients
- 3 firm pears
- 60 ml 1/4 cup olive oil
- 1 1/2 tsp ground coriander
- Salt & ground black pepper to taste
- 1 tbsp fresh lemon juice
- 2 tsp honey
- 1 bunch mizuna stems trimmed, washed, dried
- 80 g piece parmesan shaved
Instructions
- Step 1
- Preheat oven to 220°C. Brush a medium roasting pan with
- the oil to lightly grease. Peel and core the pears, then cut
- into eighths.
- Step 2
- Place pears, 1 tablespoon oil, coriander, salt, and pepper
- in a large bowl. Toss to combine. Spoon into greased pan
- and roast in preheated oven, turning occasionally, for 20
- minutes or until pears are golden.
- Step 3
- Meanwhile, place the remaining oil, lemon juice, honey,
- salt, and pepper in a small screw-top jar. Shake well to
- combine.
- Step 4
- Serve the pears, mizuna and parmesan drizzled with
- dressing.
