Ingredients
  

  • 4 cups Summer melon seeded & diced
  • 1 cup Red bell pepper diced
  • ½ cup Celery sliced
  • 1 cup Cucumber - Armenian sliced in half lengthwise, and then sliced into ¼ inch thick pieces
  • 1 small Red onion diced
  • 2 cups Cherry tomatoes - Red & yellow sliced in half
  • ½ Jalapeno seeded & minced
  • 3 tbsp Lime juice

Method
 

  1. Add all of the ingredients in a large bowl and toss to combine.
  2. Serve over arugula with baked tortilla chips.
