Ingredients
  

  • 4 cups mixed greens lettuce
  • 1/2 cup watermelon radish sliced
  • 1/2 cup red onion sliced, slivered
  • 6 each cherry tomatoes (or grape tomatoes)
  • 1/2 cup blueberries
  • 1 oz parmesan cheese
  • 1 tbsp red wine vinegar
  • 1 tbsp lemon juice
  • 2 tbsp olive oil
  • 1 tsp dijon mustard
  • 1/8 tsp salt
  • 1/4 tsp black pepper

Method
 

  1. In a big salad bowl or individual bowls, add mixed greens
  2. On top of lettuce, arrange nicely watermelon radish, red onion, cherry tomatoes, blueberries, and parmesan cheese (plate presentation)
  3. Whisk vinaigrette ingredients: vinegar, lemon juice, oil, mustard, salt, and pepper
  4. Serve vinaigrette on the side or toss everything together
