Roast Pear, Mizuna, and Parmesan Salad

Ingredients
  

  • 3 firm pears
  • 60 ml 1/4 cup olive oil
  • 1 1/2 tsp ground coriander
  • Salt & ground black pepper to taste
  • 1 tbsp fresh lemon juice
  • 2 tsp honey
  • 1 bunch mizuna stems trimmed, washed, dried
  • 80 g piece parmesan shaved

Instructions
 

  • Step 1
  • Preheat oven to 220°C. Brush a medium roasting pan with
  • the oil to lightly grease. Peel and core the pears, then cut
  • into eighths.
  • Step 2
  • Place pears, 1 tablespoon oil, coriander, salt, and pepper
  • in a large bowl. Toss to combine. Spoon into greased pan
  • and roast in preheated oven, turning occasionally, for 20
  • minutes or until pears are golden.
  • Step 3
  • Meanwhile, place the remaining oil, lemon juice, honey,
  • salt, and pepper in a small screw-top jar. Shake well to
  • combine.
  • Step 4
  • Serve the pears, mizuna and parmesan drizzled with
  • dressing.
